Substantiate Your Salad

I wanted to give you some tips on how to increase the fruits and vegetables in your diet.  A great way is to add salads to  your day. Many think of salads as “rabbit food” as my dear Hubby refers to them. But it doesn’t have to be the case. I just saw a great meal salad on The Today Show-Spinach & Sweet Potato Salad with Warm Bacon Dressing. One awesome tips I agree with is to skip the bottled dressings that are usually loaded with salt, fat and chemicals. Always remember if you can’t pronounce it, don’t eat it.  Also I liked the advice of adding some protein and fat to feel satisfied.  It’s not about cutting out meats and fats, it’s about eating the appropriate proportions and adding more plant-based foods to our diet.     Do you know the name of the author of the cook book which I think was called Warm Salads? I can’t find it and would like more recipes like the Spinach, Sweet Potato and Bacon recipe which I almost created in my kitchen that night. My husband even liked it.

      The book and author of the Spinach & Sweet Potato Salad is Food Matters: A Conscious Guide to eating by Mark Bittman. I have not looked at the book as I watched Mark make this salad on the Today show. However in the review it does list some other salads, such as

      “Thai beef salad, which isn’t meat-heavy, but rather has “just the right balance of meat to greens.”
